Sugar Cookies

Sugar Cookies
4 cups flour 1 tsp baking powder 1 tsp baking soda 3/4 tsp nutmeg 3/4 tsp salt (regular not kosher) 1 cup softened butter 1 1/2 cups sugar 2 tsp vanilla 2 eggs 3/4 cup sour cream
sift all dry ingredients; cream butter & sugar w/ vanilla; beat in eggs; add dry ingredients alternately w/ sour cream chill dough @ least 1 hour (can chill overnight)
roll out 1/3 dough at time to 1/4 inch thickness (leave rest in fridge 'cuz it gets sticky)
flour your surface, knead flour into dough to prevent stickiness; cut out w/ floured cutters; sprinkle w/ sugar & bake @ 375 8-10 minutes
*my mother-in-law swears by using parchment paper on cookie sheets to keep from sticking & browning
Sugar Cookie Frosting 1/2 cup softened butter 1/2 cup Criso (hard block) 4 cups confectioners sugar 1 tsp vanilla 2 TBS whole milk
sift sugar into bowl & set aside; beat butter, crisco in small bowl until creamy; add sugar 1/2 cup at time & beat until creamy; add vanilla, then milk, beat until creamy again
if it's too thick, add more milk
can make ahead & store in fridge but want to pull out & get to room temp before frosting cookies
**Both the cookie & frosting recipes can be halved

Dessert- Chocolate Malted Brownie Pie

Trish's Chocolate Malted Brownie Pie

1 1/4 cups sugar
6 tablespoons butter- softened
3 squares melted semi-sweet chocolate
3 large eggs- separated
1/2 cup all-purpose flour
1 teaspoon vanilla extract
Chocolate malted milk powder
1 cup heavy whipping cream
1/8 teaspoon salt
Confectioner's sugar
Chocolate-covered malted milk balls for garnish

1. Preheat oven to 325 degrees. Grease 9" pie-plate. In large bowl with mixer at medium beat sugar, butter, melted chocolate and egg yolks until well blended. Stir in flour, vanilla extract, 1/3 cup malted milk powder and 2 tablespoons cream.

2. In small bowl, with clean beaters with mixer at high speed beat egg whites and salt until soft peaks form. With a spatula fold beaten egg whites into chocolate mixture. Pour mixture into pie-plate.

3. Bake pie 30-35 minutes until toothpick inserted into center of pie comes out clean. Cool completely on rack.

4. To serve sprinkle lightly with confectioner's sugar. In small bowl beat 1/2 cup chocolate malted milk powder and remaining cream until soft peaks form. Spoon into decorating bag & pipe around pie. Garnish with milk-balls.

10 servings 410/ serving.

Mint Chocolate Ice Cream Dessert

Base: 25-30 Oreo Cookies (not double stuff) 1/4 cup melted butter (In food processor, mix together and press in sprayed 9 x 13. Freeze) Middle: 1-1/2 blocks of Mint Chocolate Chip Ice Cream (or Choc- Mint Moosetracks since bigger chocolate chunks) Slice and Mash down over the base layer. Top: 1 cup Confectioner's Sugar 2 Tbs. Butter 1 cup Chocolate Chips 2/3 cup Evaporated Milk. (Small can or Large can if making 2) Vanilla Mix ahead of time in saucepan until all blended together and starts to boil. Cool a couple of hours. Put together and freeze, covered. The first piece will be hard to cut out but the rest will be easy. From a patient at Dr. B. (Pat & Jerry D.)

Fruit Dip

Nutella mixed 50/50 with Plain Greek Yogurt.

It's great for a fruit dip. I used 6 of my new little dishes to separate the fruit (and make it look cute).

Cut up:
Green Apples (lemon so they don't brown)
Pears
Strawberries
Pineapple
Blackberries

It was a winner last night at Euchre. Only problem was that people wished there was more chocolate dip! :)

Suzan Brooks Fellabaum My hubbys new fav is brownies, poke holes in it while it's cooling. After cooled pour on caramel sauce and 1/2 can sweetened condensed milk to fill in holes. Top with whip cream and sprinkle with crushed heath bars. Super easy and wickedly good.

Pumpkin Bars

4 eggs
2 cups sugar
1 cup oil
2 cups pumpkin (1 can)
2 cups flour
2 teaspoons soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup nuts (if desired)

Cream the oil, sugar, and eggs. Add pumpkin, cinnamon, salt, soda, and flour.
Bake at 350 degrees for 20 to 25 minutes. (Make in a long bar pan.—I use
a heavy cookie sheet.) Cool. Frost with recipe below.

Frosting
2 cups powdered sugar
3 oz. Cream Cheese, softened
¾ stick Margarine (6 Tablespoons)
1 teaspoon vanilla
1 teaspoon cream or milk

Fudge

MILLION DOLLAR FUDGE

1/2 c. butter
4 1/2 c. sugar
1 (12 fl. oz.) can evaporated milk
3 (12 oz.) pkgs. Baker's real semi-sweet chocolate chips
1 (7 oz.) jar Kraft marshmallow creme
3 c. chopped nuts
1 tsp. salt
1 tsp. vanilla
Bring butter, sugar and milk to a full rolling boil in heavy 4 quart saucepan, stirring constantly.
Boil 5 minutes over medium heat, stirring constantly to prevent scorching.
Remove from heat. Gradually stir in chocolate chips until melted. Add remaining ingredients; beat until well blended. Pour into greased 13x9 inch pan. Cool, cut into squares.
Makes 6 pounds of fudge.
Prep. time: 5 minutes. Cooking time: 20 minutes.

Chocolate Banana Bread

1-1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1/2 cup sugar
2 bananas, mashed
1/4 cup butter, melted & cooled
1 egg
2 Tbsp milk
1/2 cup chocolate chips
1/2 cup chopped walnuts

In small bowl combine flour, baking powder and salt, set aside. In large bowl combine sugar, banana, butter, egg and milk, beat well. Add flour mixture. Stir in choc chips and nuts. Spread in greased loaf pan. Bake 350 for 65 min. Cool and remove from pan.

Pecan Pie

Pecan Pie

9 inch pastry shell, unbaked (I use Pillsbury roll out)

Filling:

4 Eggs, beaten
1 Cup Sugar
1 Cup Dark Corn Syrup
1 Tablespoon Flour
1/2 Teaspoon Salt
3 Tablespoons Butter, melted
1 Cup whole Pecans (or more)
2 teaspoons vanilla

Preheat 350 degrees. Mix all ingredients and pour in shell. Bake 55-60 minutes.

Ginger Snap Recipe

Ginger Snaps (from the other Annette) :)

Cook Time: 10 minutes
Ingredients:

* 2 3/4 cups self-rising flour
* 1 teaspoon baking soda
* 1 teaspoon cinnamon
* 1 teaspoon ginger
* 1/4 teaspoon cloves
* 1 cup brown sugar, packed
* 3/4 cup margarine or butter, softened
* 1 egg
* 1/4 cup light molasses

Preparation:
Combine flour, soda, and spices in a bowl and set aside. Cream sugar and margarine. Beat in egg and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 2 hours or more. Preheat oven to 375 degrees.

Shape dough into 3/4-inch balls, roll in granulated sugar, and place on lightly greased baking sheets about 2 inches apart. Flatten each ball with the bottom of a glass dipped in sugar. Bake about 8 to 10 minutes, until set.


Makes 8 dozen cookies.

Dessert- Butterscotch Haystacks

Butterscotch Haystacks

1 c. butterscotch chips
1/2 c. peanut butter
1/2 c. peanuts
2 c. LaChoy chow mein noodles

Heat the peanut butter & butterscotch chips on 50% power in microwave for 3-5 min. Stir, then add noodles and peanuts. Drop by teaspoonfuls onto wax paper. Let them harden and eat 'em all up!

Chocolate chip cookie doe (Pillsbury in fridge section)
Bake in 12 inch pizza pan. Bake 350' until brown. (8-10 min)

Mix:
8 oz. cream cheese
1/3 c. sugar
1 tsp. vanilla
Spread this over the cooled cookie.

Make pretty: cut strawberries, kiwi, bananas, mandarin oranges.
Cover with peach or apricot preserves. (or Apple Jelly)

Chocolate Sheet Cake

Cake:
2 c. flour
2 c. sugar
3-1/2 Tbsp. cocoa
1/2 c. buttermilk (or 1/2 c. milk & 1 T. vinegar)
1 tsp. baking soda
2 sticks butter
1 c. water
2 eggs
1 tsp. vanilla

Frosting:
1/3 c. milk
1 stick butter
3-1/2 Tbsp. cocoa
1 # powdered sugar
1 teas. vanilla
1/2 c. nuts (nut topping)

Mix flour, sugar, cocoa, set aside. Mix buttermilk, soda & set aside. Bring butter & water to boil. Add to flour mixture. Add eggs & vanilla. Add buttermilk mixture. Mix all and pour into greased cookie sheet. Bake 400' for 20 min.

Start frosting 15 min. after cake cooking. 1/3 c. milk, 1 stick butter, 3-1/2 T. cocoa (hot but not boiled). Add 1 # box powdered sugar, 1 tsp. vanilla and optional nut topping. Spread over hot cake.

Chocolate Eclair

** MUST MAKE THE DAY BEFORE. DO NOT COVER**

9x13 pan.

Graham crackers.
1 can chocolate frosting

1- 8 oz. cool whip
2 boxes french vanilla pudding (instant)
2 cups milk

Mix the pudding with the milk. Mix the cool whip in it.
Layer the Graham crackers. 1/2 of the pudding/cool whip mixture. Graham crackers, the rest of the pudding/cool whip mixture. Graham crackers. Spread 1 can chocolate frosting on top.
In fridge. Do not cover.

 Microwave the can of frosting in 30 second intervals until it is melted and runny.  Try not to overheat it, as it will get a little grainy if you do.  Don't worry about it too much, it'll still be so delicious you'll wonder if you really have to share it.
- Pour the melted frosting onto the top layer of pudding.

1/4 # oleo
1-1/2 c. graham cracker crumbs
1 c. coconut
1 (6 oz) pkg. chocolate chips
1 (6 oz) pkg. butterscotch chips
1 c. nuts (optional)
1 can Eagle Brand milk.

Melt oleo in 9x13 cake pan at 350'. Sprinkle the following in layers over melted oleo. Graham crackers, coconut, chocolate & butterscotch chips. Nuts and then pour the Eagle Brand milk in thin streams over ingredients evenly.
Bake 325' for 25 mins.

Good... real sweet!

No bake Cookies

1 stick butter
2 c. sugar
1/3 c. cocoa
1/2 c. milk

Cook med. high. Bring to roaring boil. Let boil for 1 min.
Remove from heat and...

Add:
3 c. oatmeal
1/2 c. peanut butter
1 teas. vanilla

Put on wax paper or aluminum foil.

Dessert Southern Pralines

Southern Pralines

Ingredients:
2 cups granulated sugar
2 cups brown sugar packed
1 cup light cream
1/2 teaspoon salt
4 tablespoons butter or margarine
2 cups pecan halves

Directions:

Lightly butter a sheet of aluminum foil. Combine sugars, cream and salt in large pot. Cook over medium heat, stirring constantly, to 228 degrees on candy thermometer (or until mixture spins a thread about 2 inches long when dropped from a spoon). Stir in butter and pecans.

Continue cooking, stirring constantly, to 236 degrees or until small amount of mixture dropped in to very cold water forms a soft ball which flattens when removed from water.

Remove from heat; cool 5 minutes. Beat mixture with wooden spoon until slightly thickened and candy just coats nuts but does not lose its gloss. Drop candy by large spoonfuls on to buttered foil.

These are good but a little tricky. The way I test the candy to see if it is ready is by taking a spoon and dropping a drop of it in a glass of cold water. If it sets—forms a ball and doesn’t disintegrate, then it is ready. You can use Pam on the foil when you drop them out also, instead of butter.

Dessert-Peanut Butter Buckeyes

Peanut Butter Buckeyes

1/2 cup butter or margarine or... (1#)
1- 1/3 cup peanut butter or... (2#)
3 cups sifted confectioners' sugar or... (3#)
chocolate bark

Cream butter and peanut butter. Stir in sugar; make walnut size balls. Melt the chocolate bark on the stove or in microwave. Dip balls into bark using a toothpick. Put on wax paper.

Enjoy!
