Meghan's Lamb (or Turkey) Meatballs

1 pound ground lamb (or turkey)
1/2 cup golden raisins
1/4 teaspoon ground cinnamon
1 ½ teaspoons kosher salt
¼ teaspoon pepper
1/2 cup bread crumbs
1 large egg, beaten
Scallions (white and light green parts), sliced. Approx ½ bunch.
1 bunch of mint leaves
 
1.    Place an oven rack in the second-highest position and heat broiler 
2.    Combine the lamb, raisins, cinnamon, salt, pepper, bread crumbs, egg, and the scallions in a large bowl (you can add other spices too if you want such as cumin, all spice or a little cayanne)
3.    Shape into golf ball-size meatballs and place on a foil-lined baking sheet. Broil, turning once, until cooked through ( approx 10 min)
4.    Serve with tzatziki sauce, mint leaves and pita bread

I haven't made it yet, but it sounds delicious and I'm trying it tonight!

Connie & Tom's Ribs

Cut the long ribs in half ( 6 halves if you buy a package with 3 ribs) Place in shallow roasting pan. Douse with a little sauce and add water to cover bottom of the pan. Cover with foil. Bake at 350* for 3 hours 15 minutes. Check 1/2 way thru and add water if needed. If they bake dry they will end up dry. Let cool. Use electric knife to cut ribs into 1 or 2 rib pieces. If you use a hand knife the meat will tear to schreds. When you're ready to eat grill the pieces with lots more sauce and burn a few. I like em like I like my women: Saucy and well done. Enjoy 😜😛😁

Chicken Parmesan (Linda's)

1# Ground Chicken
1 Egg
1/3 (appx) Whole Wheat Bread Crumbs
1/4 (appx) Parmesan Cheese
Fresh Garlic
1/3 (appx) A lot of Fresh Parsley
Salt/Pepper
Marinara Sauce or any kind of Spaghetti Sauce

Make into patties and roll in a mixture of 1/2 & 1/2 Bread Crumbs & Parmesan Cheese.
Flash Fry (until brown) in Olive Oil. Put in baking dish w/ sauce on the bottom first. Cover with sauce, but don't have them swimming in the sauce. Bake at 350 degree oven for 45 mins. Take out and top with fresh parmesan cheese & put back in just long enough to melt the cheese.
Serves 4 people.

Serve w/ 90 Second Quinoa & Brown Rice Packet.
First sauté some Fresh Garlic, Onion, Carrots and Spinach.

Linda first introduced us to this when we went to Bradenton to see their new condo. It was amazing and knowing Linda, it's super healthy! She served it with the Quinoa and Salad with Healthy Brownies and her home made Biscotti for dessert. Yum! It's nice to make ahead of time if you're having company. :)

Spaghetti Sauce (Kathie's)


Here is the recipe I kind of follow for meat sauce!
1 pound ground beef
2 links of Italian sweet sausage (remove from casing)
2 links of Italian hot sausage (remove from casing)
2 cloves of garlic
2 cans of Italian paste (with seasonings)
1 can (14-16 oz) chopped tomatoes (with seasonings)
1 large can (32 oz) good quality tomato sauce or puree
1 tablespoon sugar
1 tablespoon Oregano
1 tablespoon Basil
1/2 tablespoon Parsley
Pepper - to taste

Brown ground meat and Italian sausage (out of casing), after it is browned, drain all the grease/oil. 
In the pan, while meat is draining, brown garlic and 2 cans of tomato paste.  Brown until darker red. 
Add meat back into the paste mixture and stir. Then add a large can of a good quality tomato sauce or puree. Rinse the can out with water, about half way getting all the sauce from the can and lid, and add to mixture. Stir. I usually add a 14-16oz can of chopped tomatoes (with seasonings) and stir. If it is too thick, then add more water. At this point put about a tablespoon of sugar and let it simmer for a couple hours. 
About 1/2 hour before you're going to serve it or turn it off, add basil, oregano, parsley, pepper. I don't measure, I just pour but I would guess about a tablespoon of basil and a bit less of oregano and parsley. Pepper to taste. Let simmer for another 1/2 hour to 45 minutes.

Andrea's pasta with sausage

2 pkgs fully cooked Smoked Sausage (cut up and cook (heat up)in pan),
Take sausage out. In the left over grease in the pan brown fresh Mushrooms cut in quarter, Onion, Green Pepper, Red Pepper. Salt, Pepper, Garlic salt. Add one can diced tomatoes and one can tomatoe sauce. Add the sausage. Cook Penne pasta. Mix everything together and top with fresh Parmesan cheese. Serve with garlic bread.

Excellent and very comforting!

Enchilada Casserole

Enchilada Casserole

2# Ground Beef browned with 1 cup onions.

Add:
1-1/2 teaspoon Salt, Pepper, Cumin.
4 teaspoons Chili Powder
1 cup water
Simmer 10 minutes or until water gone.

2 cups Taco Sauce (2 jars) mild.
12 Corn Tortillas
1# shredded Monterey Jack Cheese
1 cup Sour Cream

9 X 12 pan layer 1/2 cup Taco Sauce, 6 Tortillas, 1/2 cup Sauce, all of Beef mixture, Sour Cream, 1/2 of the Cheese, rest of the Tortillas, rest of the Sauce, then top with Cheese.

Bake 375 degrees for 40 minutes covered. Uncover and bake another 5 minutes. Let set a little while before eating.

Healthy Chicken Sausage with Veggies

Asaigo and Guoda Chicken Sausage cut up from Costco. No msg. Not bad for you!
One red, yellow and orange pepper sliced.
Onion
Very thin sliced white potatoes (micro first, with skin on)
Montreal Steak seasoning.
2 sausages for each person since they are 120 calories each.

Don't need a salad.
Light dessert.

Kathie's Italian Sauce

1 pound hamburger
1 pound Italian sausage (if using "hot" sausage start with 1/2 a pound)
garlic
oil
1 tablespoon sugar
large can of tomato puree
16 oz can diced tomatoes with Italian seasonings
2 small cans Italian paste with Italian seasonings.


Brown garlic in oil. Put in meat, break it up and brown. Drain oil. Add both cans of Italian paste and simmer for a couple of minutes. Add tomato puree and stir. You might need 1/2 can of water (use the puree can so it's more like tomato flavored water by rinsing can). Add diced tomatoes. Stir together. Then add sugar and simmer sauce low for 1/2 hour to hour.

Depending on how it tastes sometimes I add basil or oregano. If it is too thick, then add water. If it is too thin, let it simmer more.

The rest is really up to how you want it to taste. I don't add salt, but you may feel it needs it. Sometimes I put pepper in. Just play around with your spices.

Sometimes at this point, I feel it is "Perfetto" that I don't add anything.

I always use name brand products -- Del Monte, or Hunts, there's another brand that I buy by sight -- can't think of the name -- but it's Italian. I just feel that some of the generic sauces don't have the flavor I'm looking for.

So at least this is a beginning point for you and what you like.

Grilled Salmon

Marinate Salmon in Italian Dressing for about 15 minutes.
Pam Spray.
Skin side on grill or foil 3-4 minutes on each side.
Lemon Juice after.

Shrimp Pasta

1 pound raw shrimp
Coat w/ Italian style bread crumbs.
Butter & Olive oil- Saute with fresh garlic.
Add Basil, Oregano, Salt & Pepper.
Add shrimp and Saute until pink.
Put in 1 can of Italian style stewed tomatoes.
Simmer.

Serve over linguine.

Yum!

Lemon Chicken

Boneless chicken breasts (works well if you pound them first between wax paper)
In a marinade tub put salt, pepper, basil, garlic powder on the chicken.
Squeeze juice from 2 lemons on them. Shake a lot.
Marinate for about 10 minutes.

Dip the chicken breasts in flour.
Fry in 1/2 olive oil & 1/2 vegetable oil until done.
Take out the chicken and put on a plate.
Add white wine to the marinade tub. Shake around to get all of the spices and lemon.
Put it in the pan. Add garlic, basil, salt & pepper.
Boil down.
Thicken with cornstarch if necessary.

Serve over fettucini noodles.

Sloppy Joes

3# ground beef
1 lg. onion
1 12 oz. chili sauce
1 14 oz. ketchup
4 T. flour
2 T. sugar
2 T. dry mustard (or reg)
2 T. white vinegar

Brown meat and onion. Add chili sauce and ketchup.
Mix flour, sugar, mustard, vinegar. Stir well. Add to rest and cook until done. Too much grease, add 1/2 c. cornflakes.

12 corn tortillas (Ted uses an extra layer.)
1# shredded monteray jack cheese
1 cup sour cream

Layer 1/2 c. sauce, 6 tortillas, 1/2 c. sauce, all of beef mixture, sour cream, 1/2 of the cheese, rest of the tortillas, rest of the sauce, then top with cheese.

Bake 375 degrees for 40 minutes covered. Uncover bake another 5 minutes. Let set a little while before eating.

Gorgonzola Pasta

Gorgonzola Pasta

3/4 cup gorgonzola cheese, crumbled - about 8 oz.
3 TB butter
1/2 lb. fresh mushrooms, chopped
1 cup vegetable or beef stock
1/4 cup white wine
4 TB heavy cream
1 cup chopped onion or shallottes
3 TB flour
dash nutmet
black pepper to taste
kosher salt


Melt butter and a couple TB of olive oil, saute shallottes for 2 minutes then add mushrooms, sprinkle with kosher salt. Sprinkle in flour, stirring. Cook two minutes. Stir in all remaining ingredients, stirring CONSTANTLY until sauce thickens Serve over favorite pasta. I like cavatappi or gemelli. Serves 3-4 people.

Kielbaska & Cabbage

Hi Jayne, here is how my mom taught me to make kielbaska & cabbage.

Cook fresh Kielbaska on hi heat in crock pot for about 3-4 hours. or in oven about 300 degrees for about 3 hours (Note: I am going to add a little apple juice in the crock pot before I add the Kielbaska) . Fresh kelby must be cooked well, because it is fresh, not smoked.

Cabbage: If you use fresh cabbage, shred like for cole slaw, cover with water in large pot & cook for about 3/4 to an hour on medium high heat until soft. Drain away water, put back into pot, add salt, pepper, browned onion, garlic (if you like), about 1/2 to 3/4 bottle of ketchup and about 3/4 cup orange or apple juice, and 1/4th cup brown sugar. Can add a peeled chopped couple of apples too if you like. Cook for about another 1/2 hour.
Then take cooked kielbaska and add to cabbage, cook about another 1/2 hour to let juices go through and serve.

Or if you want to use canned saurkraut, 2 large jars, or cans, rinsed and drained, then add salt, pepper, browned onion, garlic ketchup O.J. or apple juice and 1/4th cup of brown sugar. Cook about 1/2 hour and add your kielbaska & cook another 1/2 hour or so to let meat juices flavor the cabbage. You can add your smoked kielbaska the last 1/2 hour of cooking the cabbage as that just needs to warm up since its smoked it doesn't need to
cook like the fresh kelby.

Beef Tenderloin Giada's Way

Beef Tenderloin

Garlic Rub...
3 cloves garlic
2 t. cumin seeds
2 t. coriander seeds ground
1/4 t. kosher salt
1 t. black pepper
2 t. extra virgin olive oil

Oil the cookie sheet so it doesn't stick.
Bake 400 degrees for 30-35 mins.

Rest the meat before you cut it.

Sauce:
1 c. mayo
1/4 c. mascarpone cheese (at rm. temp)
1/3 c. fresh basil leaves
1 T. curry
1 tea. smoked paprika (powder)
kosher salt
black pepper

3# gr. beef
1 lg. onion
1- 12 oz. chili sauce

Patty's Chicken Casserole

Patty H. Chicken Casserole

6 boneless chicken breasts. (stove boiled or oven w/ water 1-1/2 covered) cut up in chunks.
2 cans cr. of mushroom soup (or 1 cr. of chicken)
1 c. mayo (or lowfat)
1 tea. lemon juice
1 big bag or 2 boxes Broccoli (chopped frozen...defrost, don't cook)
1 can mushrooms
2 c. grated cheese (colby & mont. jack)
Paprika & 1/3 c. bread crumbs w/ butter.

Bottom of pan place broccoli, toss chicken over broccoli.
Mix soup, mayo, lemon juice & can of mushrooms).
Spread over chicken. Spread cheese on top. Paprika & 1/3 c. bread crumbs w/ butter.

Bake 350' 30-40 min. (10 more min. if made ahead of time in fridge.)
Cover for half the time w/ foil.
9x13 pan.

Stuffed Cabbage

From my patient, Pat Quint's Mom.

Stuffed Cabbage

1# ground beef
1# ground pork
1-1/2 tsp. salt
1/2 tsp. pepper
2/3 c. uncooked rice (not sure-try it and see)
1 egg
1 lg. onion-chopped
3 Tbs. shortening
1 lg. head cabbage
1 can saurkraut
1 No. 2 can tomato juice (lg. can)

1. Core cabbage & place in boiling salted water- enough to cover. Remove leaves as they soften.
2. Brown onion in shortening.
3. Add onions to meat, seasonings and rice & beaten egg... Mix well.
4. Place a Tbs. or so of met mixture on each cabbage leaf and roll up-tuck in edges.
5. Place layer of saurkraut in bottom of pot.
6. Next layer cabbage rolls- repeat layers
7. Can chop leftover cabbage & place on top.
8. Pour tomato juice over the cabbage rolls & fill pot with water until 1/2 - 2/3 full.
9. Cover & cook slowly 1-1/2 -2 hrs. or until rice is tender.
10. Can pour sour cream on top & cook 5 min. more.

Serves about 8 people.
