- Olive Oil
- Onion 1/2 chopped
- Garlic (a lot)
(saute)
- Can Diced or Petit Diced Tomatoes (14.5 oz) or bigger can if making more.
- White wine 1/4-1/2 cup (any kind we like)
Let that cook together approximately 15 minutes.
Add whatever vegetables you want, but these go together well:
- Asparagus (microwave for a minute first)
- Broccoli (microwave for a minute first)
- Zucchini
- Yellow Squash
- Red or yellow pepper
- Spinach (add at the end)
- Pesto: 2 (or more!) Tablespoons.
Let that all cook together.
- Add shrimp or chicken **Optional
- Penne pasta: Cook 3 handfuls per person. More vegetables than pasta.
Put into the sauce.
Let it stand for a couple of hours before you eat it.
Better the next day, so make enough for leftovers!
Serve w/ Pita bread wedges broiled or baked with olive oil, garlic salt, parmesan cheese.
Or garlic bread.
