Caroline's Quiche Lorraine Brunch:)

Caroline says we must make our own crust. It makes all the difference! Use a non-stick Quiche pan that lifts from the side. When making the dough put it in the fridge, but don't worry. It will be hard to roll out because of the butter. Play with it a little bit and then roll; keep doing that. Patch it if there are holes. Don't rub it. Before putting it in the fridge put it in saran wrap so it can roll of easily.

Use thick bacon in the Quiche and not the most expensive cheese, but good cheese. 

Serve with Arugula Salad with sliced oranges, baby tomatoes, thinly sliced fennel and Garlic Expressions dressing. I am putting in pomagranite because it will be Christmas-y. 

Also serve with a nice coffee cake. 
Sparkling water served w/ mint & lime.

Hummus
red & yellow peppers, cucumbers, broccoli, cauliflower, carrots, tomatoes. 
In a basket, put pita chips and several kinds of crackers.
Artichoke/Spinach dip from Costco warmed.
3 kinds of cheese on a wooden block with knives for them to cut.

Costco chocolate long tube cake.

Fruit Dip

Nutella mixed 50/50 with Plain Greek Yogurt.

It's great for a fruit dip. I used 6 of my new little dishes to separate the fruit (and make it look cute).

Cut up:
Green Apples (lemon so they don't brown)
Pears
Strawberries
Pineapple
Blackberries

It was a winner last night at Euchre. Only problem was that people wished there was more chocolate dip! :)

Breakfast Potatoes


ROSIES TEXAS POTATOES.
SERVES 15                           Pan size 9"x13"x2"
Temp : 350                          Baking time.... 1 hour
2 pound bag frozen hash brown       1/2 C chopped onions
potatoes (cubed)                            2 t salt
1 (11) can Cheddar cheese soup       1 t pepper
1 C Cheddar cheese, shredded          1/2 cup melted butter...I use unsalted!
1 C sour cream
HERE COMES TOUGH PART......LOL
Mix all 8 ingredients.    Put in greased baking dish.  Bake for 1 hour. @ 350!!!!!!

I sometimes sprinkle paprika after just to look "fancy"...hahahhahaahaaaha

Marty's Mexican Cheese Dip

6 oz. Swiss cheese grated
6 oz. Sharp Cheddar cheese grated
6 oz Monterey Jack cheese grated
3 cans Chopped Green Chilies
3 eggs

 Mix all together.
Bake 350 for 30 minutes.
Can be microwaved to re-heat.

Serve with Triskets/Crackers.

Anti Pasta (Rosemary's)

This is the original recipe for Anti Pasta.

1 can of black olives
1 jar of Spanish olives
1 jar of marinated mushrooms
2 jars of artichokes (marinated)
1 jar of cherry peppers
1 jar of peppeioncinic (this is how she spelled it whatever it is)
2 stalks of celery thinly sliced
1/2 lb of thinly sliced cured provolone (regular provolone)
1/2 lb of sliced pepperoni
1 pint of cherry tomatoes
4 tomatoes thinly sliced 1/2 lb provolone (cubed provolone)

Drain everything EXCEPT marinated mushrooms & artichokes. Combine all ingredients in a plastic bag or container and let sit in fridge for a few hours. Arrange tomatoes & provolone slices around outside of platter & spoon mixture in center of platter. Place pepperoni and additional cheese slices around edges.

Best served as first course with breadsticks or warm acacia.

If you can not find marinated mushrooms just get plain and drain the liquid and marinate them with the artichoke marinated.
