Breakfast Potatoes


ROSIES TEXAS POTATOES.
SERVES 15                           Pan size 9"x13"x2"
Temp : 350                          Baking time.... 1 hour
2 pound bag frozen hash brown       1/2 C chopped onions
potatoes (cubed)                            2 t salt
1 (11) can Cheddar cheese soup       1 t pepper
1 C Cheddar cheese, shredded          1/2 cup melted butter...I use unsalted!
1 C sour cream
HERE COMES TOUGH PART......LOL
Mix all 8 ingredients.    Put in greased baking dish.  Bake for 1 hour. @ 350!!!!!!

I sometimes sprinkle paprika after just to look "fancy"...hahahhahaahaaaha

Marty's Mexican Cheese Dip

6 oz. Swiss cheese grated
6 oz. Sharp Cheddar cheese grated
6 oz Monterey Jack cheese grated
3 cans Chopped Green Chilies
3 eggs

 Mix all together.
Bake 350 for 30 minutes.
Can be microwaved to re-heat.

Serve with Triskets/Crackers.

Anti Pasta (Rosemary's)

This is the original recipe for Anti Pasta.

1 can of black olives
1 jar of Spanish olives
1 jar of marinated mushrooms
2 jars of artichokes (marinated)
1 jar of cherry peppers
1 jar of peppeioncinic (this is how she spelled it whatever it is)
2 stalks of celery thinly sliced
1/2 lb of thinly sliced cured provolone (regular provolone)
1/2 lb of sliced pepperoni
1 pint of cherry tomatoes
4 tomatoes thinly sliced 1/2 lb provolone (cubed provolone)

Drain everything EXCEPT marinated mushrooms & artichokes. Combine all ingredients in a plastic bag or container and let sit in fridge for a few hours. Arrange tomatoes & provolone slices around outside of platter & spoon mixture in center of platter. Place pepperoni and additional cheese slices around edges.

Best served as first course with breadsticks or warm acacia.

If you can not find marinated mushrooms just get plain and drain the liquid and marinate them with the artichoke marinated.

Andrea's pasta with sausage

2 pkgs fully cooked Smoked Sausage (cut up and cook (heat up)in pan),
Take sausage out. In the left over grease in the pan brown fresh Mushrooms cut in quarter, Onion, Green Pepper, Red Pepper. Salt, Pepper, Garlic salt. Add one can diced tomatoes and one can tomatoe sauce. Add the sausage. Cook Penne pasta. Mix everything together and top with fresh Parmesan cheese. Serve with garlic bread.

Excellent and very comforting!

Meghan's Granola

i also challenge you to make granola tomorrow or this weekend! go get these ingredients. then i will tell you EXACTLY how to make it. you will feel so accopmlished and can put it in your greek yogurt all week and you'll feel very domesticated :)

3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
cinnamon
dash of vanilla
1 cup raisins (OPTIONAL: i dont use them bc i like to mix w/ fresh fruit.)

Mix dry ingredients. Mix oil & maple syrup & vanilla. Mix into the dry ingredients. Bake at 250 degrees for 1 hour 15 minutes (mixing every 15 minutes). May need to spread on 2 cookie sheets. When done add dry fruit if you want.

Pepperoni Bread

Pepperoni Bread

1 Pillsbury Pizza Dough (Thick crust)
On wax paper with light flour roll out 8 x 12
Layer with sandwich pepperoni
Sprinkle with shredded mozzarella cheese
on top sprinkle with parmasean shredded cheese.

Roll up like jelly roll. (seam on bottom)
Beat egg and brush on top.
Bake 350 for 15-20 minutes or golden brown.

Buffalo Wing Dip

Buffalo Wing Dip

Serve with Fritos or Ritz Crackers

1 8oz. Cream Cheese
2 Chicken Breasts cut up (Rotisserie works well)
Kraft Blue Cheese Dressing
Ranch Dressing
Franks Hot Sauce
Shredded Cheese

Spread cream cheese in bottom of pie plate. Layer with chicken, both dressings and Frank's Hot sauce. Top with shredded cheese. Bake 350 degrees until cheese melts.

Enchilada Casserole

Enchilada Casserole

2# Ground Beef browned with 1 cup onions.

Add:
1-1/2 teaspoon Salt, Pepper, Cumin.
4 teaspoons Chili Powder
1 cup water
Simmer 10 minutes or until water gone.

2 cups Taco Sauce (2 jars) mild.
12 Corn Tortillas
1# shredded Monterey Jack Cheese
1 cup Sour Cream

9 X 12 pan layer 1/2 cup Taco Sauce, 6 Tortillas, 1/2 cup Sauce, all of Beef mixture, Sour Cream, 1/2 of the Cheese, rest of the Tortillas, rest of the Sauce, then top with Cheese.

Bake 375 degrees for 40 minutes covered. Uncover and bake another 5 minutes. Let set a little while before eating.

Suzan Brooks Fellabaum My hubbys new fav is brownies, poke holes in it while it's cooling. After cooled pour on caramel sauce and 1/2 can sweetened condensed milk to fill in holes. Top with whip cream and sprinkle with crushed heath bars. Super easy and wickedly good.

Healthy Chicken Sausage with Veggies

Asaigo and Guoda Chicken Sausage cut up from Costco. No msg. Not bad for you!
One red, yellow and orange pepper sliced.
Onion
Very thin sliced white potatoes (micro first, with skin on)
Montreal Steak seasoning.
2 sausages for each person since they are 120 calories each.

Don't need a salad.
Light dessert.

Kathie's Italian Sauce

1 pound hamburger
1 pound Italian sausage (if using "hot" sausage start with 1/2 a pound)
garlic
oil
1 tablespoon sugar
large can of tomato puree
16 oz can diced tomatoes with Italian seasonings
2 small cans Italian paste with Italian seasonings.


Brown garlic in oil. Put in meat, break it up and brown. Drain oil. Add both cans of Italian paste and simmer for a couple of minutes. Add tomato puree and stir. You might need 1/2 can of water (use the puree can so it's more like tomato flavored water by rinsing can). Add diced tomatoes. Stir together. Then add sugar and simmer sauce low for 1/2 hour to hour.

Depending on how it tastes sometimes I add basil or oregano. If it is too thick, then add water. If it is too thin, let it simmer more.

The rest is really up to how you want it to taste. I don't add salt, but you may feel it needs it. Sometimes I put pepper in. Just play around with your spices.

Sometimes at this point, I feel it is "Perfetto" that I don't add anything.

I always use name brand products -- Del Monte, or Hunts, there's another brand that I buy by sight -- can't think of the name -- but it's Italian. I just feel that some of the generic sauces don't have the flavor I'm looking for.

So at least this is a beginning point for you and what you like.
