Sugar Cookies

Sugar Cookies
4 cups flour 1 tsp baking powder 1 tsp baking soda 3/4 tsp nutmeg 3/4 tsp salt (regular not kosher) 1 cup softened butter 1 1/2 cups sugar 2 tsp vanilla 2 eggs 3/4 cup sour cream
sift all dry ingredients; cream butter & sugar w/ vanilla; beat in eggs; add dry ingredients alternately w/ sour cream chill dough @ least 1 hour (can chill overnight)
roll out 1/3 dough at time to 1/4 inch thickness (leave rest in fridge 'cuz it gets sticky)
flour your surface, knead flour into dough to prevent stickiness; cut out w/ floured cutters; sprinkle w/ sugar & bake @ 375 8-10 minutes
*my mother-in-law swears by using parchment paper on cookie sheets to keep from sticking & browning
Sugar Cookie Frosting 1/2 cup softened butter 1/2 cup Criso (hard block) 4 cups confectioners sugar 1 tsp vanilla 2 TBS whole milk
sift sugar into bowl & set aside; beat butter, crisco in small bowl until creamy; add sugar 1/2 cup at time & beat until creamy; add vanilla, then milk, beat until creamy again
if it's too thick, add more milk
can make ahead & store in fridge but want to pull out & get to room temp before frosting cookies
**Both the cookie & frosting recipes can be halved

grape tomatoes, chopped (few handfuls) fresh basil leaves, chopped fresh garlic, finely minced (@ least garlic powder (few sprinkles) salt (about 12 twists from grinder) pepper (about 20 twists from grinder) olive oil (enough to just coat tom) balsamic vinegar (enough to cover all tom. this is the key--gotta be good brand, sweet) mix all together & let set

Corn Casserole (Linc)

Linc's Corn Casserole

One 14 3/4 oz. Can Cream-style corn (not drained)
One 15 1/4 oz. Whole Kernel Corn w/ peppers (drained)
One Box (15oz?) Fleischmann's Corn Muffin Mix
One Cup Sour Cream (Breakstone's)
One Stick Butter (melted)
7 oz. Shredded Sharp Cheddar Cheese

Mix everything but the cheese in bowl. Pour into greased glass 9x13.

Bake 45- 50 (50) minutes, then add the cheese on top and bake another 10 minutes.
Let cool 5 minutes.

Soooooo Good!

Raspberry-Cranberry Sauce

Raspberry-Cranberry Sauce

(Don't add water)

3 cups (12 oz. package) fresh cranberries
1 (10 oz. package) frozen raspberries
1 cup sugar
Cinnamon stick

Combine ingredients in a deep saucepan. Bring to a boil, stirring constantly. Lower heat and simmer 5 minutes. Add a loose lid to keep the spatters under control, not tightly. Pour into container and store in refrigerator. This is refreshing and sparkling. Makes about 4 cups.

Creamy Corn Casserole

Creamy Corn Casserole

1 can (16oz.) cream-style corn
1/4 cup melted butter
1/2 cup plus 2T cornbread mix
1/4 cup water
1 medium onion, finely chopped
1 egg beaten
salt

Combine all of the ingredients and turn into a 1-1/2 quart casserole. Bake at 350 degrees for 40 minutes or until set. (Serves 6)

Livens up a "plain meat" meal.

Connie & Tom's Ribs

Cut the long ribs in half ( 6 halves if you buy a package with 3 ribs) Place in shallow roasting pan. Douse with a little sauce and add water to cover bottom of the pan. Cover with foil. Bake at 350* for 3 hours 15 minutes. Check 1/2 way thru and add water if needed. If they bake dry they will end up dry. Let cool. Use electric knife to cut ribs into 1 or 2 rib pieces. If you use a hand knife the meat will tear to schreds. When you're ready to eat grill the pieces with lots more sauce and burn a few. I like em like I like my women: Saucy and well done. Enjoy 😜😛😁

Chicken Parmesan (Linda's)

1# Ground Chicken
1 Egg
1/3 (appx) Whole Wheat Bread Crumbs
1/4 (appx) Parmesan Cheese
Fresh Garlic
1/3 (appx) A lot of Fresh Parsley
Salt/Pepper
Marinara Sauce or any kind of Spaghetti Sauce

Make into patties and roll in a mixture of 1/2 & 1/2 Bread Crumbs & Parmesan Cheese.
Flash Fry (until brown) in Olive Oil. Put in baking dish w/ sauce on the bottom first. Cover with sauce, but don't have them swimming in the sauce. Bake at 350 degree oven for 45 mins. Take out and top with fresh parmesan cheese & put back in just long enough to melt the cheese.
Serves 4 people.

Serve w/ 90 Second Quinoa & Brown Rice Packet.
First sauté some Fresh Garlic, Onion, Carrots and Spinach.

Linda first introduced us to this when we went to Bradenton to see their new condo. It was amazing and knowing Linda, it's super healthy! She served it with the Quinoa and Salad with Healthy Brownies and her home made Biscotti for dessert. Yum! It's nice to make ahead of time if you're having company. :)

Spaghetti Sauce (Kathie's)


Here is the recipe I kind of follow for meat sauce!
1 pound ground beef
2 links of Italian sweet sausage (remove from casing)
2 links of Italian hot sausage (remove from casing)
2 cloves of garlic
2 cans of Italian paste (with seasonings)
1 can (14-16 oz) chopped tomatoes (with seasonings)
1 large can (32 oz) good quality tomato sauce or puree
1 tablespoon sugar
1 tablespoon Oregano
1 tablespoon Basil
1/2 tablespoon Parsley
Pepper - to taste

Brown ground meat and Italian sausage (out of casing), after it is browned, drain all the grease/oil. 
In the pan, while meat is draining, brown garlic and 2 cans of tomato paste.  Brown until darker red. 
Add meat back into the paste mixture and stir. Then add a large can of a good quality tomato sauce or puree. Rinse the can out with water, about half way getting all the sauce from the can and lid, and add to mixture. Stir. I usually add a 14-16oz can of chopped tomatoes (with seasonings) and stir. If it is too thick, then add more water. At this point put about a tablespoon of sugar and let it simmer for a couple hours. 
About 1/2 hour before you're going to serve it or turn it off, add basil, oregano, parsley, pepper. I don't measure, I just pour but I would guess about a tablespoon of basil and a bit less of oregano and parsley. Pepper to taste. Let simmer for another 1/2 hour to 45 minutes.

Dessert- Chocolate Malted Brownie Pie

Trish's Chocolate Malted Brownie Pie

1 1/4 cups sugar
6 tablespoons butter- softened
3 squares melted semi-sweet chocolate
3 large eggs- separated
1/2 cup all-purpose flour
1 teaspoon vanilla extract
Chocolate malted milk powder
1 cup heavy whipping cream
1/8 teaspoon salt
Confectioner's sugar
Chocolate-covered malted milk balls for garnish

1. Preheat oven to 325 degrees. Grease 9" pie-plate. In large bowl with mixer at medium beat sugar, butter, melted chocolate and egg yolks until well blended. Stir in flour, vanilla extract, 1/3 cup malted milk powder and 2 tablespoons cream.

2. In small bowl, with clean beaters with mixer at high speed beat egg whites and salt until soft peaks form. With a spatula fold beaten egg whites into chocolate mixture. Pour mixture into pie-plate.

3. Bake pie 30-35 minutes until toothpick inserted into center of pie comes out clean. Cool completely on rack.

4. To serve sprinkle lightly with confectioner's sugar. In small bowl beat 1/2 cup chocolate malted milk powder and remaining cream until soft peaks form. Spoon into decorating bag & pipe around pie. Garnish with milk-balls.

10 servings 410/ serving.
